If you get a few minutes of a recipe of fish and chips, will you ignore it? You’re hungry and have no interest in cooking either. Here’s the perfect recipe—start with these simple steps….

Step 1: Cut the potatoes into fries shape, wash them first... See the ingredients.

Ingredients

For the Fish:

  • 500g (1 lb) white fish fillets (cod, haddock, or tilapia)

  • 1 cup all-purpose flour (substitute: rice flour for extra crispiness)

  • 1 cup cold sparkling water (substitute: soda water or beer for a lighter batter)

  • 1 tsp baking powder (for fluffiness)

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika (optional, for extra flavor)

  • Oil for frying

For the Chips:

  • 3 large potatoes, peeled & cut into thick fries

  • Cold water (for soaking)

  • ½ tsp salt

  • Oil for deep frying

Optional Serving:

  • Lemon wedges

  • Tartar sauce or mayo

  • Malt vinegar

Before We Start:

  • Use cold sparkling water – Makes the batter light and crispy.

  • Soak potatoes in cold water – Removes excess starch for crispier fries.

  • Fry twice – Ensures fries are golden and crispy.

  • Dry the fish – Helps the batter stick better.

Instructions

Prepare the Chips

Step 1: With a cutter or sharp knife, peel the potatoes and cut them into fries shape. Soak them in cold water for 30 minutes (or overnight for extra crispiness).

Step 2: Drain the potatoes and place them on a dry towel (you need to dry the potatoes; you can dry them anyway).

Step 3: Take a deep pan and heat oil on low to medium flame (I hope you're getting it) or simply, if you have a heat meter, set it to 160°C (320°F). The temperature must be this.

Step 4: Fry the potatoes in batches for 4-5 minutes until soft but NOT browned. Remove from the pan and drain on paper towels.

Make the Batter

Step 5: Take a bowl, add flour, baking powder, salt, black pepper, and paprika. Mix it.

Step 6: Gradually add cold sparkling water while whisking to make it smooth. Let the batter rest for 5-10 minutes.

Fry the Fish

Step 7: Heat the pan with oil over low-medium flame, in the middle position, at a temperature of 180°C (350°F).

Step 8: Pat the fish fillets dry (dry the fish thoroughly). Dust lightly with flour to help it stick in the batter.

Step 9: Dip the fish into the smooth batter, letting the excess drip off (let the extra drip).

Step 10: Take a pan, heat the oil, let it warm for a minute, then place the fish fillets and fry for 5-7 minutes until golden and crispy. Drain over paper towels.

Second Fry for Chips

Step 11: (As we have done one fry of potato fries before, this is the second time.) Increase the heat temperature to 190°C (375°F).

Step 12: Fry the potatoes again for 3-4 minutes until golden and crispy.

Drain and serve instantly—fish and chips!
