Ingredients
For the Chicken:
500g (1 lb) boneless chicken (cubed)
2 tbsp cornflour (substitute: potato starch)
2 tbsp all-purpose flour
1 egg (substitute: 2 tbsp yogurt for an egg-free version)
½ tsp salt
½ tsp black pepper
1 tsp soy sauce
Oil for frying
For the Manchurian Sauce:
2 tbsp oil
1 small onion, finely chopped
2 garlic cloves, minced
1 tbsp ginger, minced
1 small bell pepper, diced (optional)
3 tbsp soy sauce
2 tbsp ketchup
1 tbsp chili sauce (adjust spice level)
1 tbsp vinegar
1 tbsp sugar (balances flavors)
1 tsp red chili flakes (optional for spice)
1 cup water
1 tbsp cornflour mixed with 2 tbsp water (for thickening)
Chopped spring onions (for garnish)
Before We Start
Cut chicken evenly – Ensures even cooking.
Coat chicken well – This makes it crispy.
Fry on medium heat – Prevents burning.
Adjust spice level – Control chili flakes & sauce.
Instructions
Prepare and Fry Chicken
Step 1: Take a bowl, add chicken, cornflour, flour, salt, black pepper, egg, and soy sauce. Mix it well to coat the chicken evenly.
Step 2: Take a pan, add oil, and heat it over medium flame. Add chicken and fry until golden brown for about 5-6 minutes.
Step 3: If it has extra oil, reduce it by tilting the pan. With the help of a spoon, remove the excess oil and set it aside.
Make the Sauce
Step 4: Take another pan, add 2 tbsp oil, and heat it.
Step 5: Add chopped garlic and ginger (or ginger garlic paste) and fry for 30 seconds.
Step 6: Add onions and bell peppers. Cook until soft.
Step 7: Add soy sauce, ketchup, chili sauce, vinegar, sugar, and chili flakes. Pour 1 cup of water and bring it to a good boil.
Thicken the Sauce & Combine
Step 8: Add the cornflour slurry (cornflour + water), stirring continuously while adding the slurry.
Step 9: Once the sauce thickens, add the coated fried chicken we placed aside and mix well. Cook for another 2-3 minutes. Make sure the chicken is done well.
When it's done, garnish with onion rings and serve with rice!
