Pasta originated in Italy but was influenced by ancient cultures such as China and the Middle East. It was invented as a nutritious, storable, and versatile food. This popular dish dates back to at least the 1st century AD and developed over centuries through cultural exchange. No single person can be credited with inventing pasta; it evolved through time.

Let’s cook pasta at home with an easy and simple step-by-step recipe:


Ingredients:


  • 2 cups of pasta

  • 2 tomatoes

  • 1 onion

  • 3-4 garlic cloves

  • Chili flakes

  • Oregano (optional, but recommended)

  • Salt and pepper to taste

  • 2 tbsp of oil

  • Basil (optional)

  • Cornstarch

  • Chicken (optional)

  • Sauces (chili, soy) homemade tomato sauce (optional)

  • Vinegar or lemon

  • Vegetables of your choice (I’ll use carrot, tomato and green capsicum)


Instructions:

Step 1: Boil 3-4 cups of water in a cooking pot or cooker over a flame. Add 1 teaspoon of salt and any cooking oil or ghee. Let these dissolve, then add 2 cups of pasta and boil for 10 minutes.

Step 2: While the pasta is boiling, place a frying pan on another flame. Add 2 teaspoons of any cooking oil (I’ll use olive oil) and add the chopped onion and 3 chopped garlic cloves (or ginger-garlic paste). Fry for 1-2 minutes.

Step 3: Keep an eye on your pasta and stir it occasionally to prevent it from sticking to the pot and to each other.

Step 4: Add boiled, boneless chicken pieces to the pan with onion and garlic. Fry for 2-3 minutes (This step can be skipped if you prefer, but it should come before adding the vegetables).

Step 5: Add green capsicum, tomatoes, and carrots cut into cubes (or any vegetables you prefer) to the pan. Lower the flame and lightly cook until the veggies are slightly crunchy for better taste.

Step 6: Season the vegetables (and chicken) with salt, black pepper, chili flakes, oregano, and basil (optional). Add 1 tbsp of chili sauce and half a teaspoon of lemon juice. If using soy sauce, add carefully due to its salty flavor.

Note: If you don’t have soy and chili sauce, use homemade tomato sauce. Skip the store-bought sauces and mix the homemade sauce with the veggies and chicken.

Step 7: Strain the boiled pasta using a net basket. Mix the pasta with the chicken, vegetables, and spices in the pan. Combine everything well.

Step 8: In a small pot, mix 2 teaspoons of cornstarch with water. Stir well and add to the pan, mixing thoroughly.
