Ingredients

  • 200g spaghetti or fettuccine

  • 100g pancetta or bacon (chopped)

  • 2 eggs

  • ½ cup grated Parmesan cheese

  • 2 cloves garlic (minced)

  • ½ teaspoon black pepper

  • Salt to taste

  • 1 tablespoon olive oil

  • Fresh parsley (for garnish, optional)

Before we start

  • Use room-temperature eggs for a creamy sauce.

  • Cook the pasta al dente for the best texture.

  • Avoid high heat when mixing the eggs and cheese to prevent scrambling.

Instructions

Cook the pasta

Step 1: Take a large pot, fill it with water, add a little oil, and salt to taste. Add 200g spaghetti and cook until done. Make sure it doesn’t stick together.
Step 2: Before draining, take out half a cup of water from the pot.

Cook the pancetta/bacon

Step 3: Take a pan, add oil, and heat it over a medium flame.
Step 4: Add chopped pancetta or bacon and cook until crispy.
Step 5: Add minced garlic, stir for 30 seconds until the aroma comes out, then turn off the heat.

Prepare the sauce

Step 6: Crack the eggs into a bowl, whisk well, then add Parmesan cheese and black pepper.
Step 7: Gradually add the reserved pasta water to loosen the mixture. Don’t add the full cup—check the consistency.

Combine everything

Step 8: In the pan with pancetta and garlic, add the drained pasta. Remove from heat, quickly mix in the egg-cheese mixture, and combine thoroughly. Add water if needed.

Take out the food in dishes and serve immediately with a sprinkle of Parmesan and fresh parsley!

Serve

Set your bowls on a tray. Fill them with pasta carbonara and add chopsticks along with a side drink—sparkling water is great for refreshing the palate. Place a few tissue papers with it too.
