For the Dumpling Dough (if making from scratch):

  • 2 cups all-purpose flour

  • ¾ cup warm water

For the Filling:

  • 250g ground chicken, pork, or shrimp

  • 1 teaspoon soy sauce

  • ½ teaspoon sesame oil

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 teaspoon minced garlic

  • 1 teaspoon grated ginger

  • 1 green onion (finely chopped)

  • ½ cup finely chopped cabbage (optional)

For Serving:

  • Soy sauce

  • Chili oil

  • Vinegar

Before We Start

  • If using store-bought dumpling wrappers, skip the dough-making step.

  • Prepare all ingredients before assembling the dim sum.

  • Use a bamboo steamer or a regular steamer lined with parchment paper.

Instructions

Make the Dumpling Dough (If Not Using Store-Bought Wrappers)

Step 1: In a bowl, add flour and a little warm water. Knead to form a dough. Knead for at least 5-7 minutes until smooth.
Step 2: After kneading, cover the bowl with a clean cloth or place a plate on top. Let it rest for 30 minutes.
Step 3: Once rested, turn the dough out onto a floured surface and shape it into small circles for wrappers.

Prepare the Filling

Step 4: In a bowl, mix ground meat/shrimp with soy sauce, sesame oil, salt, pepper, garlic, ginger, green onion, and cabbage. Mix evenly until fully combined.

Assemble the Dim Sum

Step 5: Take a spoonful of the meat mixture and place it in the center of a wrapper.
Step 6: Fold the edges and pinch them together to seal.
Step 7: Shape into small dumplings or siu mai-style dim sum.

Steam the Dim Sum

Step 8: Line a steamer with parchment paper or lightly oil the surface.
Step 9: Place the dim sum inside, leaving space between each piece.
Step 10: Steam over boiling water for 10-12 minutes until fully cooked.

Serve

Place the dim sum on a plate with sauce, chili oil, and chopsticks. Serve with hot and sour soup and a few tissue papers.
